My husband Chris and I are obsessed with this sweet potato salad recipe, so of course I wanted to share it with you all! He makes it when he cooks at the firehouse, and everyone loves it! Anytime we make a potato salad at home this is definitely our go-to. There are so many reasons to love this sweet potato salad recipe with the most obvious being that it’s absolutely delicious!

Flavors

The lime, dill, balsamic vinegar, bacon and sweet potato meld together to create a truly unique flavor that just works. I love bacon so dang much. This recipe would still be great without it, but bacon just brings another element that makes this dish something we keep coming back to!

Just a note that we do adjust this recipe a bit by leaving out the red pepper flakes and cinnamon. We have nothing against those ingredients, we just don’t add them. We’ve been making this sweet potato salad recipe for so long that I honestly can’t remember why we didn’t add them in the first place. Maybe we just didn’t have them on hand, I’m not sure, but it tasted so amazing without them that we just decided to keep it that way!

How great is it when you can eat something super delicious that’s ALSO good for you?! Win-win, right?! Well this recipe isn’t only scrumptious, it’s full of good-for-you nutrients too. 

Sweet potatoes are an excellent source of the antioxidants beta carotene (which your body can convert into Vitamin A), Vitamin C, and chlorogenic acid, and also contain Vitamin E. They contain B-Vitamins (B5 & B6), as well as minerals like potassium and manganese. Sweet potatoes are a source of fiber, and if they are allowed to cool after cooking they are a good source of resistant starch as well (which acts like fiber). Fiber and resistant starch are not only good for gut health (supporting healthy gut flora) but they also support blood sugar control.

This recipe contains one of the most nutritious varieties of vinegar, balsamic vinegar. Balsamic vinegar is full of antioxidants and acetic acid. Acetic acid has antibacterial properties, reduces inflammation and supports healthy blood pressure. When vinegar is consumed with a meal it blunts post-meal blood sugar spikes, which supports better blood sugar control. Another bonus: acetic acid is also excellent for gut health!

Olive Oil is a rich source of monounsaturated fat (called oleic acid) and antioxidants. You’ve heard of the health benefits associated with a Mediterranean Diet, right? Well, olive oil is a main staple in a Mediterranean Diet! It’s been shown to have anti-inflammatory properties as well as supports cardiovascular health. It’s also shown to have anti-cancer properties and reduces risk for Alzheimers and Type 2 Diabetes.

Dill is a source of vitamins, minerals and antioxidants. It has antibacterial and anticancer properties and supports heart health and healthy blood sugar levels. 

Garlic is a powerhouse health food! It’s not only known to be great for supporting the immune system, but it also supports gut, cardiovascular and brain health!

It's Versatile

We enjoy this sweet potato salad recipe several different ways. This dish makes a great skillet-type meal by topping it with an egg. Throw some avocado on top and yum! Because breakfast truly is my favorite meal (bacon and coffee, need I say more?) this is my personal favorite way to enjoy this dish.

It’s an excellent complement to a meal as a side dish. You could serve it hot out of the oven, or cool it in the fridge and serve it as a cold potato salad. 

This dish is also a great snack if you need a healthy pick-me-up that will satisfy hunger and keep your energy stable between meals.
