We’re ALWAYS ready for Taco Tuesday! Mexican food is definitely a staple for us and this recipe always hits the spot. SO many delicious flavors, and easy to throw together! You can follow the recipe as is, or switch anything up and make it your own.
Mexican food just has so many delicious flavors and is satisfyingly filling. Bonus – all the veggies and spices make for a healthy, nutritious meal. We always opt for grass-fed beef and organic ingredients whenever possible to make it the healthiest version.
You could easily make your own guacamole (or even taco seasoning!) but we used Whole Foods fresh made guac to make this pull together even easier and faster!
We usually use a bed of lettuce to put the meat, bean mixture and toppings on but this time we opted for a broccoli slaw to switch things up.
I don’t usually put cheese on my bowl but Chris likes it, and we use dairy-free Chao Creamery Mexican Style shreds.

Taco Bowls
Ingredients
- 1 pound ground beef
- 1 Tbsp avocado oil (or grass-fed butter)
- 1/4 yellow onion (diced)
- 1 bell pepper (diced)
- 1 handful cilantro (chopped)
- 1 15 oz. can black beans
- 1 14.5 oz. can fire roasted tomatoes
- 1/2 cup salsa
- 1 packet taco seasoning (we use the 365 brand from Whole Foods)
- 2 cups broccoli slaw (or 3 cups spring mix lettuce)
- Guacamole (optional)
- Limes (optional)
- Tortillas (optional)
- Cheese (optional topping - we use the Chao Creamery plant based Mexican style shreds)
Instructions
- In a large pan on medium to medium high heat, add the avocado oil (or butter) and brown the ground beef and onion. Add the taco seasoning packet according to directions on the packet. Simmer the meat with taco seasonings until meat is completely cooked through.
- In a medium pot combine the black beans, fire roasted tomatoes, peppers, and 1/4 cup of salsa. Heat on low to medium low, stirring occasionally until heated through.
- Place broccoli slaw (or lettuce) in the bottom of your bowls. Top with meat, black bean mixture, guacamole, salsa, cilantro and a squeeze of fresh lime. Add any other toppings you desire!
- Instead of doing taco bowls, you could of course use tortillas and make tacos!
